Jalapeno Cornbread Muffins

These muffins are naturally gluten free and are perfect to accompany any of your favorite Southern/Southwestern style dishes.

cornmeal gluten free flour jalapenos sugar salt olive oil butter eggs baking powder honey and butter for serving


Whisk sugar, baking powder, cornmeal, flour, salt until combined.

In a separate medium bowl, whisk eggs and then add oil, melted butter and milk.

Add wet ingredients to dry and whisk until smooth.

Stir in the jalapenos.

Divide the butter equally between muffin cups and bake for 20-25 minutes at 350 F.

Enjoy with butter, honey on it's own or serve with your favorite stew or chili!
