Gently mix the meatball ingredients together, being careful not to overwork the meat. Roll the mixture into ¾-inch to 1-inch meatballs.
Heat 1 tablespoon of olive oil in a large soup pot over medium-high heat. Brown the meatballs in batches for about 5 minutes. They’ll finish cooking in the soup later. Remove them from the pot and set aside.
Cook the pasta according to the package directions, then rinse it under cold water to stop the cooking process.
