These lentil tacos with quinoa and cashew queso are nut-free, protein-packed, and perfect for Meat-Free Mondays!
Cook quinoa and lentils as per package instructions. Mix with spices, nutritional yeast, salsa, salt, and pepper in a bowl.
Preheat oven to 400°F. Spread the mixture on a baking sheet and bake for 30 minutes, stirring every 10-12 minutes.
Soak cashews (2 hours in room temp water or 30 min in hot water). Drain and blend with all ingredients except olive oil.
Slowly blend in olive oil until smooth, adjusting seasoning if needed.
Spread lentil filling on warm tortillas, top with queso, guacamole, lime juice, and cilantro. Enjoy!
