This Israeli couscous recipe is one of my favorite quick and easy meals. It comes together in just 25 minutes and is packed with sautéed mushrooms, garlic, and tender spinach.
1. Prepare the veggies: Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add the diced onion and sauté for about 3-5 minutes, until soft and translucent. Stir in the minced garlic and cook for 1 minute until fragrant.
