This one-pan sautéed chicken and veggies is a quick, flavorful meal! Marinated in red pesto, Italian herbs, and spices, then pan-fried to perfection.
Combine chicken with half the paprika, Italian seasoning, salt, pepper, and 2 tsp pesto. Toss to coat and marinate for 30 minutes.
Cook chicken in a skillet with 1 tbsp oil over medium-high heat for 5-7 minutes. Remove and set aside.
Sauté onion, then add garlic, veggies, pesto, herbs, salt, and pepper. Cook until crisp-tender, add broccoli for 1 minute, return chicken, mix well, and remove from heat.
Serve with fresh thyme and parsley.
