This Mediterranean Chicken is a flavorful one-pot meal with juicy marinated chicken and roasted veggies—a wholesome, comforting dish!
Mix marinade ingredients in a bowl. Coat chicken thoroughly. Cover and refrigerate for at least 30 minutes (ideally 4-6 hours).
Preheat oven to 350°F. Place chicken in a 9x13-inch baking dish, surround with veggies, season with salt, and pour in broth and marinade.
Bake for 25 minutes. Add halved or whole cherry tomatoes, drizzle with olive oil, and season with salt and pepper.
Bake for another 30 minutes until chicken reaches 165°F and is golden brown. Veggies should be tender.
Discard old thyme, garnish with fresh herbs, and serve with lemon wedges, rice, or Mediterranean couscous.
