Oven Baked Veggie Kabobs

Veggie Kabobs in the oven are cooked until tender and delicious with a simple herb marinade that anyone can make.

Ingredients: seasonal vegetables olive oil ranch or italian seasoning salt and pepper paprika garlic powder onion powder chil iflakes parmesan for garnish

Cut the vegetables into thick slices and same size so they can cook at the same rate.

Prepare the marinade and toss the veggies until fully covered. Let marinate for at least 30 minutes.

Thread the veggies on skewers and bake for 10-12 minutes at 200 F broiler setting if you have one.

Optional: Transfer the veggie skewers to a grill or a grill pan until lightly charred.

Serve right away with left over marinade and grated parmesan.
