Skillet-Fried Salmon Patties are crispy outside, flaky inside, and packed with creamy mayo, lemon juice, garlic, red onion, and bell pepper.
Dice skinless salmon fillets into small pieces and set aside.
Heat oil in a skillet over medium heat. Sauté onion and bell peppers, then add garlic for 30 seconds.
In a bowl, mix salmon, bell peppers, onion, and remaining ingredients. Season with salt and pepper.
Shape into 12 medium-sized patties, slightly flattened.
Cook patties in the same pan with remaining oil over medium-high heat for 4-5 minutes per side until golden. Drain on paper towels.
Serve with parsley, green onions, lemon wedges, and your favorite dip. Pairs well with mashed potatoes.
