Easy & Quick Pasta Fagioli

My take on classic Pasta Fagioli— a hearty one-pot tomato soup with beef and veggies, inspired by Olive Garden!

Step 1

Heat oil in a pot, brown beef over medium-high, drain fat, and set aside.

Step 2

Heat oil in the same pot, cook onions, carrots, and celery for 5 minutes. Add garlic, then herbs, sugar, salt, pepper, and beef. Cook until combined.

Step 3

Add broth, tomato sauce, water, and tomatoes. Bring to a boil, then simmer on medium-low until veggies are tender.

Cook ditalini pasta al dente per package instructions.

Step 5

Stir in cooked pasta, white beans, and kidney beans. Adjust seasoning and add water or broth if needed.

Cook 1 more minute, stir in parsley, and serve warm with Romano or Parmesan cheese.
