Rinse shrimp and pat dry. Cook with tails on, then remove.
Mix marinade in a bowl, coat shrimp, cover, and refrigerate for 30 minutes.
Make Thai peanut sauce. Add water to thin. Chill 15-30 minutes for better flavor or store up to 5 days.
Heat a pan with oil over medium-high. Cook shrimp 1-2 minutes per side until opaque (2-3 minutes for large shrimp).
Fill lettuce wraps with coleslaw, veggies, shrimp, and peanut sauce.
