Chicken Tortilla Soup is an easy, hearty weeknight dinner packed with shredded chicken, corn, beans, and crispy tortilla strips.
Heat oil in a pot over medium-high heat. Sauté onion and garlic until tender.
Add corn, beans, chili powder, tomato paste, cumin, crushed tomatoes, salt, and broth. Bring to a boil, then simmer for 10 minutes.
Stir in rotisserie chicken and simmer for another 10 minutes. Finish with lime juice.
Serve with tortilla strips, avocado, cilantro, and lime wedges.
To make tortilla strips, heat ¼ cup oil in a pan. Cut tortillas into thin strips and fry in batches.
Drain on paper towels and serve with the soup.
