Tender potatoes and ham in a creamy, cheesy sauce, baked to perfection and topped with buttery cornflakes. A delicious casserole for any meal!
Preheat oven to 350°F and grease an 8x11" or 9x9" baking dish.
Sauté onion in 2 tbsp butter until softened.
Whisk in flour to make a roux, then gradually add broth and milk until thickened. Stir in garlic powder, salt, and pepper.
Stir in ½ cup cheddar until melted. In a bowl, mix potatoes and ham, then add sauce. Transfer to casserole dish.
Cover with foil and bake for 60-65 minutes. Meanwhile, mix crushed cornflakes with melted butter in a small bowl.
Uncover, top with cheese and buttered cornflakes, and bake for 10-15 minutes..
Let rest for 10 minutes to thicken, then garnish with parsley before serving.
