Brown ground meat and onion in a skillet over medium-high heat with a little oil. Drain excess fat for a lighter soup.
Transfer the browned meat and onion to a 4.5-quart crockpot or a similar size.
Add spices, salt, pepper, and remaining ingredients. Stir, cover, and cook on LOW for 4-6 hours or HIGH for 3-4 hours.
Taste, adjust seasoning, and add broth if too thick.
