Pineapple Coconut Pancakes

 It comes together with only 5 ingredients that are all cooked in one pot until thickened to desired consistency. 

Ingredients: pineapple sugar gluten free flour or regular baking powder baking soda salt eggs olive oil vanilla extract milk coconut flakes for garnish caramel sauce (optional)

In a large mixing bowl combine wet ingredients, mix and add to dry ingredients.

Pour the batter about heaping ¼ cup scoops on a non stick griddle

Cook until a bit of bubbles form and then gently flip over. 

Cook for few seconds more and transfer to moderately warm oven to serve later or serve immediately with butter, pineapple pieces and Coconut Caramel Sauce.
