Enhance your ordinary oatmeal by adding a little pop of color with nutritious Pitaya. It’s delicious, vegan, sweet, fulfilling, comforting, and HEALTHY.
Ingredients: regular or plant based milk gluten free rolled oats coconut milk pitaya powder pinch of kosher salt cinnamon honey toppings!
Add milk to a medium pot and bring to a simmer.
Add in the oats, salt, and cinnamon.
Cook, stirring occasionally for the porridge not to stick to the bottom of the pot. Stir until the oats are creamy and have absorbed the liquid, about 5-8 minutes.
Add in the pitaya powder and coconut milk. Stir well!
Remove from the heat, cover with a lid, and set aside for 2 minutes.
Transfer to your favorite serving bowls and decorate with your favorite toppings.
