Stuffed Butternut Squash, filled with a delicious blend of sausage, veggies, fruit, and warm spices, is a hearty and wholesome dish bursting with flavor.
Preheat oven to 400°F. Halve squash, remove seeds, and roast cut-side down for 40-45 minutes until fork-tender.
In a skillet, heat oil over medium heat. Cook onion and celery with salt until golden, then add garlic until fragrant.
Brown sausage, then add diced apple and cook until softened. Stir in raisins, brown sugar, cinnamon, and Worcestershire sauce.
Scoop out some squash flesh, mix it into the filling.
Then stuff squash halves. Heat for 10 minutes if needed. Enjoy!
