Hearty One-Pot Vegetarian Lentil Stew with sweet potatoes, coconut milk, spices, kale, and lentils! This comforting, nutrient-packed bowl is Vegetarian, Vegan, Dairy-Free, and Gluten-Free.
Heat oil in a pot, sauté onions until soft, then add ginger, garlic, and spices.
Add sweet potatoes and stir to coat with spices. Add lentils and mix well.
Pour in vegetable stock, cover, and bring to a boil. Reduce heat and simmer until lentils are tender and potatoes are almost cooked.
Stir in coconut milk, kale, and lime juice. Simmer for 3 minutes until kale softens. Adjust salt and lime juice if needed.
Serve in bowls, garnished with jalapeños, chili flakes, lime wedges, and cilantro. Pair with fresh bread or cornbread.
