Mexican Stuffed Peppers are a new twist on the classic stuffed pepper recipe. These perfectly baked peppers are loaded with pulled chicken, rich red enchilada sauce, seasonings, plenty of cheese, rice, and of course beans.
In a large skillet with oil over medium heat, sauté onion until soft. Add garlic and taco seasoning; cook 1 minute more until fragrant.
In a large bowl, mix cooked chicken, ½ cup enchilada sauce, corn, black beans, cooked rice, cilantro, salt, and pepper.
Cut the tops off peppers, remove seeds and ribs, rinse, and dry. Place snugly into a 9x13-inch baking dish. Lightly spray inside with olive oil and season with salt and pepper. Bake for 15–20 minutes until slightly softened.
