Zucchini Fritters

These healthy and yummy zucchini fritters are soft on the inside with a delicious crispy exterior.

Step 1

Grate zucchini (unpeeled) into a fine mesh strainer over a large bowl, season with salt, and let stand for 15-30 minutes.

Step 2

Squeeze out as much water as possible (I like wrapping grated zucchini into a thin linen cloth, cheesecloth, or kitchen towel and squeezing out the excess liquid).

Step 3

Transfer the zucchini into a bowl and add all the rest ingredients. Roll 8 balls, (about 1 ½ heaping tablespoon size of mixture per ball).
