Vegetarian cauliflower and broccoli patties are flavorful, low-carb, and gluten-free, made with healthy veggies like spinach. Ready in under 30 minutes!
In a food processor or bowl, combine cooked, drained broccoli and cauliflower.
Pulse until softened. Add spinach and sun-dried tomatoes, then pulse a few more times until combined. Avoid over-processing into a purée.
Mix in salt, pepper, eggs, breadcrumbs, panko, and flour. Stir until combined, then shape into 2-tablespoon-sized balls.
Coat each patty in ¼ cup breadcrumbs. Heat 1-1½ inches of oil in a large nonstick or grill pan over medium-high heat.
Cook patties in hot oil for about 5 minutes per side until golden and crispy. Fry in batches, keeping space between them to prevent sticking.
Transfer to a paper towel-lined plate, cover with foil, and keep warm. Patties should be crispy outside and firm inside.
Serve warm with your favorite dip or as a main dish with rice, mashed potatoes, or gravy.
