– 3 cup fresh pumpkin medium diced– 1 ½ tsp red curry paste– 1 ½ cup canned chickpea drained– ½ tsp salt or more to taste– pepper to taste– ½ tbsp vegetable oil
Ingredients
Sprinkle diced pumpkin with salt and pepper along with a drizzle of vegetable oil.
Bake at 370 F for 30-45 minutes or until soft and slightly golden brown.
Once roasted, transfer the pumpkin to a food processor and pulse until smooth and creamy.
Add chickpeas, curry paste, more salt, and pepper to taste if needed. Pulse again until creamy.
