Gluten-free apple cobbler is a beloved fall treat with cinnamon-spiced fried apples and a fluffy cake-like topping. Serve with vanilla ice cream and caramel sauce—sweet but so worth it!
In a bowl, whisk flour, oats, brown sugar, baking powder, and salt.
Cut butter into cubes and mix into the flour until crumbly (hands work best).
Gradually stir in cream until the mixture is almost wet but not smooth. Set aside.
Add fried apples with cinnamon (or apple filling) to a cast-iron skillet.
Spread the flour mixture over apples, leaving some gaps.
Bake at 375°F for 30-40 minutes until golden and crisp.
