Mash the sardine in a bowl or jar, add dressing ingredients, and mix well. Refrigerate for 15-60 minutes.
Season lettuce with salt, pepper, and lemon/lime juice. Massage for 3-5 minutes, then drizzle with olive oil and let sit for 30 minutes.
Season chicken, cook for 5-6 minutes per side (3-4 for thinner pieces) until 165°F, then rest on a paper towel-lined plate.
