Potato Salad (No Eggs) – A quick, light BBQ side with potatoes, bacon, and a mustard olive oil vinaigrette. Perfect for any meal or party!
Boil potatoes until tender, then rinse under cold water. Cut into halves or thick slices and set aside.
Shake all dressing ingredients in a jar (except bacon and onions). For best flavor, refrigerate before use.
In a bowl, toss potatoes with dressing (add gradually to taste).
Top with bacon, onions, and black pepper. Serve with BBQ meats and enjoy!
