Gluten Free Red Velvet Cookies In Air Fryer

INGREDIENTS
  

  • 1 egg, room temp
  • 1 ½ cup gluten free flour, I used Schar Mix C or 1 TO 1 Measure for measure or Bob Red Mill
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cups butter softened
  • ½ cup brown sugar
  • ½ cup white granulated sugar
  • 1 tablespoon milk
  • red food GEL coloring add little by little for your desired color, i used about 1 ½ teaspoon
  • 1 cup white chocolate chips

INSTRUCTIONS
 

  • In medium bowl combine together salt, baking powder, cocoa powder and flour.
  • In a large mixing bowl, beat the butter and sugar for4 minutes until fluffy with an electric hand mixer.
  • Add the egg, milk, and vanilla extract and continue to whisk. Stir in your food coloring. I find that gel coloring works best as it distributes evenly in the mixture. Add small batches at a time referring to packaging instructions.
  • Now combine wet and dry ingredients, fold in chocolate chips, cover and let chill in the fridge for 1 hour.
  • The cookie dough should resemble playdough and you should be able to easily shape it into small balls. When ready to bake, preheat the Air Fryer to 325 degrees Fahrenheit.
  • Take about 1 heaping tablespoon of dough and roll it with your hands into a ball. Place into air fryer basket.
  • Bake the dough balls for 5-7 minutes. Transfer to a wire rack to cool completely after which they can be stored in an airtight container.

NOTES

  • What flavor is red velvet? Red velvet cookie dough is creamy with a hint of cocoa and loaded with chocolate chips. It has a cake-like quality in cookie form that’s irresistible.
  • Any leftover air fryer red velvet cookies can be stored at room temperature for 2-3 days. Cover them with plastic wrap tightly, and keep them in an airtight container or a cookie jar to prevent them from drying out.
  • Once the cookies are done baking, remove the air fryer basket from the air fryer but allow the cookies to first cool (for about 5 minutes). Then transfer these to a wire cooling rack. This is recommended so the soft cookies don’t fall apart once cooled.
  • It’s normal for these air fryer cookies to be soft once freshly baked in the air fryer. They will harden as they cool. 
  • Don't roll cookie dough for too long in your hands otherwise, the dough will warm and create spreading.
