INGREDIENTS
  

The Sliders

  • 1 young golden zucchini, medium (approx. 7oz)
  • 1 teaspoon salt
  • 2 tablespoon olive oil cooking

The Best Guacamole

  • 2 large avocado
  • ½ lime juice
  • 1 slice jalapeno
  • ¼ teaspoon salt
  • ½ red onion small
  • 1 tablespoon parsley or cilantro
  • ½ garlic clove
  • teaspoon black ground pepper

INSTRUCTIONS
 

  • Cut zucchini in circles approximately 6-7 mm thick (0.27 inch), generously sprinkle with salt on both sides.
  • Heat up pan or skillet with olive oil and cook zucchinis until golden on both sides.
  • When ready, remove from pan and transfer to a plate in layers, separating them with a paper towel in between. This allows removing the excess oil from the zucchini.
  • Meanwhile, prepare the guacamole dip. Mash up avocados with a muddler (not too creamy, I like to leave some bigger chunks inside), drizzle with lime juice and set aside while you cut the rest ingredients. When done, mix everything in a small bowl. Start making sliders by taking two zucchini circles and placing about 1 tablespoon of guacamole dip in between. Shape and even out the sides with your fingers or a back of a small spoon.
  • Garnish with fresh greens like cilantro, parsley, or fresh oregano leaves like I did on the pictures.
  • Serve while zucchinis are still warm, this way they will taste super good!

NOTES

You can use both green and yellow zucchini for this recipe. However, the green zucchini may slightly have a bitter taste rather than yellow zucchini/squash.
