INGREDIENTS
1 ¾lbboneless beef roast
2teaspoonsalt
1onion, diced
2tablespoonpaprika
2teaspoonbasil
1teaspooncayenne
1tablespoongarlic powder
1teaspoonpepper
1teaspoonchili flakes
1cupvegetable , or beef stock
¼cupapple cider vinegar , or red wine vinegar
1tablespoonhoney , or brown sugar
¾cupcrushed tomatoes
INSTRUCTIONS
In a small bowl, combine all the spices together.
Place a diced onion into the bottom of a slow cooker.
Gently pat the beef fillet dry with a paper towel, so that the rub adheres to the beef better.
Rub the seasonings evenly with your fingers over the beef fillet on both sides.
Add chopped onions into the slow cooker and follow with spiced beef fillet on top.
Ina large mixing bowl, mix together the apple juice, vinegar, tomatoes, and honey together and pour over the beef.
Cook on low for 8 hours. At around 6-7 hours mark, open the lid and pull the beef apart with two forks. Be careful not to scratch the bottom of the slow cooker. (You can also take the beef out and do it on a separate plate.) When done, close the lid and let it finish cooking.
After cook time, remove beef from slow cooker and place in a large bowl.
Serve on buns, or over mashed potatoes, pasta, rice, in tacos/tortillas/chimichangas, pita bread, etc.
