Mississippi Mud Cheesy Potatoes

These Mississippi mud cheesy potatoes are filled with all the best things - perfectly baked potatoes, melted cheddar cheese, crispy bacon, a dollop of mayonnaise, and fresh green onions. These potatoes are super easy to make and will definitely become a staple in your dinner menu.

INGREDIENTS
  

  • 12 medium potatoes, peeled and diced
  • 2 cups cheddar cheese, grated
  • 1 1 lb package bacon, cut and cooked
  • 1 teaspoon garlic salt
  • ¾ cup mayonnaise
  • ½ cup green onions, thinly sliced

INSTRUCTIONS
 

  • Preheat oven to 325 F.
  • In a 9 x 13 baking dish, combine the potatoes, bacon, garlic, cheese, and onion.
  • Add in the mayonnaise and stir until all the potatoes are evenly coated.
  • Place pan in the preheated oven, and bake for about 1.5 hours or until potatoes are tender.
  • Remove from oven and serve!

NOTES

  • It is not necessary to cook the bacon before, but it adds a bit more crisp to the potatoes in the end. 
  • If you are in a rush, simply leave the potatoes unpeeled. It also adds extra nutrition!
  • You can also use yogurt or cream cheese instead of mayo.
