INGREDIENTS

Cheesy Summer Squash Zucchini Bites

  • 1 summer squash gray zucchini, medium, grated and drained
  • 1 egg
  • cup breadcrumbs
  • ¼ cup Parmesan cheese, or semi-mild cheese, grated
  • ¼ cup blue cheese, grated
  • ½ half onion, small, diced
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Avocado Yogurt Dressing

  • ½ cup Greek yogurt or plant-based yogurt
  • 1 avocado, mashed
  • ½ teaspoon salt
  • 1 tablespoon cilantro, or parsley if don’t like cilantro
  • ¼ lime juice

INSTRUCTIONS

  • Preheat oven to 400F. Line baking sheet with parchment paper. Brush the surface lightly with olive oil.
  • Wash and peel zucchini. Finely grate it into a bowl. Then transfer and wrap it into a thin kitchen towel placed over a strainer and a bowl in the bottom. (See images)
  • Twist the towel to wring out the moisture.
  • Cut the mushrooms and onion into small pieces.
  • Mince or crush the garlic using a garlic cutter.
  • In a large bowl, combine zucchini, cheeses, breadcrumbs, mushrooms, garlic, onion, oregano, salt, and pepper and mix well.
  • Shape the mixture into small one tablespoon-size balls using your hands, and transfer to the baking sheet.
  • Bake for 20-25 minutes or until golden brown from the outside.
  • Garnish with parsley and serve with avocado yogurt on the side.

Avocado Yogurt Dressing

  • Mash one avocado until creamy.
  • In a small bowl simply mix avocado, minced garlic, yogurt, one tablespoon chopped cilantro (use parsley if not coriander lover). Taste for salt.

NOTES
