Creamy Oatmeal Porridge With Grapes And Apricots

A warm bowl of creamy oatmeal porridge is the perfect way to kick-start your day! You need fuel to give you the energy to power through the day. And if you combine an energizing mix of oats, milk, cinnamon, sweet dark grapes, and fresh apricots you’ll be all set for the rest of your day. Ingredients
  

  • ¾ cup regular or nondairy milk
  • ½ cup coconut milk
  • cup oats gluten free if desired
  • handful of grapes
  • pinch of salt
  • 1 small apricot
  • 1 ½ teaspoon cinnamon
  • 1 tablespoon flax seeds
  • 1 teaspoon maple syrup optional if you like more sweet

Instructions
 

  • Add milk to a pot and bring to a simmer. Add in the oats, salt, and cinnamon. Cook, stirring occasionally for the porridge not to stick to the bottom of the pot.
  • Stir until the oats are creamy and have absorbed the liquid, about 5-8 minutes. Add a little more milk or water if needed.
  • Add in diced apricot, maple syrup (or leave it for drizzle on top), flaxseeds, and coconut milk.
  • Remove from the heat and cover for 2 minutes to let the apricot soften and warm through.
  • Transfer to your favorite serving bowls and decorate with grapes, sliced apricot, and sprinkle with cinnamon and chocolate, or with any of your favorite toppings.
