Preheat oven to 325 F.
In a 9 x 13 baking dish, combine the potatoes, bacon, garlic, cheese, and onion.
Add in the mayonnaise and stir until all the potatoes are evenly coated.
Place pan in the preheated oven, and bake for about 1.5 hours or until potatoes are tender.
Remove from oven and serve!
It is not necessary to cook the bacon before, but it adds a bit more crisp to the potatoes in the end.
If you are in a rush, simply leave the potatoes unpeeled. It also adds extra nutrition!
You can also use yogurt or cream cheese instead of mayo.
