Lime Cilantro Rice

Presenting you the new kind of rice - Lime Cilantro Rice, with zesty lime and cilantro flavors, tender, fluffy rice makes a great side dish for a Mexican or Asian Dinner party. Use it as a side dish for baked fish, chicken, meat, or with tacos and burritos. Simply delicious!

  • 1 cup white or brown rice uncooked, properly rinsed
  • teaspoon black ground pepper use chili pepper mix for a little spice
  • 2 teaspoon garlic powder
  • 1 teaspoon lime zest
  • 1 ½ teaspoon salt
  • 1 teaspoon lime juice
  • ¼ cup cilantro finely chopped
  • ½ of a small onion white, chopped
  • 2 cups chicken or vegetable broth i used vegetable bouillon cubes


  • Heat oil in a large skillet over medium heat.
  • Add the chopped onion and cook until translucent. Stir in the garlic powder and cook for a few minutes more.
  • Add in rice and stir, until all the rice is coated in the onion and garlic oil. Toast the rice for 2-3 minutes, and pour in the veggie stock.
  • Reduce the heat to medium-low and add in lime zest, salt.
  • Close with a lid and simmer on low for 20-25 minutes.
  • Remove from the heat, drizzle with lime juice, stir and let the rice sit for 10 minutes.
  • Fluff the rice with a fork and stir in chopped cilantro until all the rice is covered. Serve warm as a side dish, in Buddha Bowls, burritos, with fish and etc.


Instead of garlic powder, you can use 1 fresh garlic clove, minced, and paste like. Personally, I don't like the strong fresh garlic taste so I like to use garlic powder instead for side dishes like this Lime Cilantro Rice.
My favorite way to use this rice is in Buddha Bowls and as a side with Sweet Potato and  Kale Tacos and Vegan Meat Tacos
