Have you tried zucchini sliders? They are easy to make, 100% vegan, come in mini bite-size pieces, and loaded with only the good and healthy stuff - zucchinis and my favorite guacamole recipe!

Mini sliders without bread and meat, really? And taste delicious?
Oh yes, please! And you have no idea how fulfilling they are!
So yummy that I ate everything that I prepared in one go, without sharing with anyone. Do I feel any Guilt? Nope, I don't! 🙂
These are perfect if you're short on time and need to serve something quickly for your guests.
You can use a mix of zucchinis - green and yellow and use the same guacamole filling. This way your guest can enjoy a little bit of variety as well.

EQUIPMENT THAT I LOVE FOR THIS RECIPE
HOW TO MAKE GOLDEN YELLOW ZUCCHINI SLIDERS
STEP 1
Cut zucchini in circles approximately 6-7 mm thick (0.27 inch), generously sprinkle with salt on both sides.
Heat up pan or skillet with olive oil and cook zucchinis until golden on both sides.
STEP 2
When ready, remove from pan and transfer to a plate in layers, separating them with a paper towel in between. This allows removing the excess oil from the zucchini.
STEP 3
Meanwhile, prepare the guacamole dip. Mash up avocados with a muddler (not too creamy, I like to leave some bigger chunks inside), drizzle with lime juice, and set aside while you cut the rest ingredients. When done, mix everything in a small bowl. Start making sliders by taking two zucchini circles and placing about 1 tablespoon of guacamole dip in between. Shape and even out the sides with your fingers or a back of a small spoon.
STEP 4
Garnish with fresh greens like cilantro, parsley, or fresh oregano leaves like I did on the pictures.
Serve while zucchinis are still warm, this way they will taste super good!

Absolutely! Thank you, Alita! These yellow ones are really good with guacamole, totally different from the green ones 🙂
