Mix Dry Ingredients – In a large bowl, whisk sugar, baking powder, cornmeal, flour, and salt. Set aside.
Combine Wet Ingredients – In another bowl, whisk eggs, then add oil, melted butter, and milk. Add to dry ingredients and mix until smooth.
Bake & Serve – Fold in flour-coated jalapenos, divide batter into muffin tin, and bake at 350ºF for 20-25 minutes. Top with melted butter!
