Air Fryer Cottage Cheese Breakfast Casserole

Mashed potatoes, eggs, and cottage cheese layered with broccoli and mozzarella, air fried until the top is crispy and golden and the inside stays soft. High in protein, ready in about 30 minutes.

  1. Boil the broccoli in boiling water for 2 minutes, then drain and let it cool.
    5 ounces broccoli florets
  2. Choose a baking dish that fits in your air fryer and grease it with olive oil or cooking spray.
  3. Put the boiled potatoes in the dish and mash them with a fork. Season with salt and pepper and smooth them into an even layer.

  4. Pour the eggs over the potatoes, then add the cottage cheese and mix the two together.

  5. Arrange the broccoli on top.
    5 ounces broccoli florets
  6. Spread the mozzarella over the broccoli.

  7. Sprinkle with the sesame seeds.

Notes

  • Match the dish to your air fryer: an 8.5 inch baking dish fits a Cosori 5.5 quart air fryer. Measure your basket before you buy a dish if you are not sure it will fit.
  • Mash the potatoes while they are warm: they smooth into an even layer much more easily than cold potatoes.
  • Mix the eggs and cottage cheese together before pouring: this keeps the layers from separating as it cooks.
  • Storage: keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for a few minutes to bring the top back to crispy.
