INGREDIENTS
2medium bananas, mashed
1 ½blueberries
¼cupmaple syrup
1cupold fashioned oats
1teaspoonbaking powder
½teaspoonground cinnamon
¼teaspoonsea salt
1cupmilk, any
1largeegg
1teaspoonpure vanilla extract
lemon zest from one large lemon
INSTRUCTIONS
Preheat oven to 375°F (190°C) and grease a 9-inch square baking dish (I used 9x8 dish). You can spray the dish but it is not that important.
Mash the bananas in the baking dish and add remaining ingredients. Mix to combine. Reserve about half a cup of berries for topping.
Bake for 55 minutes to an hour until the top is golden brown. Remove the baked oatmeal from the oven and let it cool for 10 minutes in the pan before slicing.
Serve warm with your favorite toppings, or enjoy as-is. Enjoy your delicious baked oatmeal!
NOTES
Makes about 6 larger slices.
To Store. To store leftover baked oatmeal, refrigerate it for 5 to 7 days either in the baking pan or in an airtight container.
To Reheat. Warm the oatmeal in a 350°F oven until warmed through, or simply heat individual bars in the microwave.
To Freeze. You can store the whole pan or wrap individual slices and place them in an airtight container or freezer bag. Baked oatmeal freezes well for up to 3 months, providing a convenient heat-and-eat breakfast option.
