  1. Lightly toast the bread in a toaster. You want it just firm, not deeply browned.

  2. If the cottage cheese looks wet, drain it in a fine sieve for a few minutes. Stir in the vanilla extract.

  3. For each sandwich, spread 2 to 3 tablespoons of cottage cheese over one slice of toast, then spread 1 to 1 and a half tablespoons of cherry preserves evenly on top. Close with a second slice of toast.

  4. Heat about 2 teaspoons of butter or vegetable oil in a frying pan over low heat.

  5. Dip each sandwich into the beaten eggs, coating both sides. Set it in the pan and cook for 2 to 3 minutes per side, until golden brown and crisp. Serve warm.

Notes

  • Use the drier style cottage cheese: Small curd and low moisture. If yours is loose, drain it in a sieve first or it will make the bread soggy.
  • Toast the bread first: A light toast gives the sandwich enough structure to hold together through the egg dip and the pan.
  • Keep the heat low: Low and slow lets the egg set and the filling warm through before the outside gets too dark.
  • Storage: Best fresh, but leftovers keep in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet or the air fryer to crisp them back up. Cooled sandwiches freeze for up to 1 month.
