Notes
- Souvlaki is best enjoyed fresh, but if you have leftovers, remove the chicken from the skewers and store it in an airtight container for up to 2 days.
- Leftovers are great in salads, wraps, or burgers. To reheat, microwave at 30-second intervals, or use the air fryer at 350°F for 3-5 minutes.
- Preheat your grill to medium-high heat (400-450°F). If using wooden skewers, soak them in water for at least 30 minutes before grilling.
- Place the marinated chicken skewers on the grill and cook for 10-14 minutes, turning every 3-4 minutes so they cook evenly on all sides.
- The chicken is done when it is lightly charred in spots and reaches an internal temperature of 165°F in the thickest piece.
- Transfer the skewers to a platter and let them rest for 3-5 minutes before serving. This helps keep the chicken juicy.
- Preheat the oven to 400°F. Place the marinated chicken skewers on a parchment-lined baking sheet, or you can bake them directly on the rack in the sheet.Bake for 25 to 30 minutes, flipping halfway through. For an extra crispy finish, use the broil setting for the last minute or two.
- Use a cast iron grill pan to cook the chicken souvlaki. Simply pan-fry until fully cooked through.
