Ingredients
  

  • 24 ounces frozen corn thawed
  • ½ red onion finely diced
  • 2 jalapenos seeded and finely diced
  • 1 bunch cilantro finely chopped
  • 2 limes juiced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • teaspoon ground cumin

Method
 

  1. Add the corn, red onion, jalapenos, and cilantro to a large bowl.
    24 ounces frozen corn, ½ red onion, 2 jalapenos, 1 bunch cilantro
  2. In a smaller bowl, combine the lime juice, salt, black pepper, chili powder, and ground cumin.
    2 limes, ½ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon chili powder, ⅛ teaspoon ground cumin
  3. Pour the lime dressing over the corn mixture and toss until evenly coated.
  4. Cover and refrigerate until ready to serve. Serve with tortilla chips.
