Before chopping the sun-dried tomatoes, blot them with a paper towel to remove the excess oil.

In a large bowl, mix the cottage cheese, grated cheese, flour, baking powder, and salt. The dough will be dry at this point.

Mix everything well. The dough will be firm.
Gather the dough into a ball and roll it out into a rectangle about 9 by 12 inches. Cut it into strips, about ¾ inch wide, and transfer them to a baking sheet lined with parchment paper.
Brush the tops with sun-dried tomato oil and bake at 350 degrees Fahrenheit (180 degrees Celsius) for 25 to 30 minutes, until golden.
