Cranberry Feta Pinwheels

A cream cheese base swirled with sweet dried cranberries, salty feta, and green onion, rolled up in a flour tortilla and sliced into easy, make ahead party bites. No baking required, just a quick chill before slicing.

Method
 

  1. In a medium bowl, beat the softened cream cheese and orange juice until smooth and well combined.
    1 package cream cheese, 2-3 teaspoons orange juice
  2. Mix in the dried cranberries, crumbled feta, chopped green onions, and a pinch of black pepper until evenly combined.

  3. Lay the tortillas on a clean work surface. Spread the cream cheese mixture evenly over the tortillas, going almost all the way to the edges. Roll each tortilla up tightly.

  4. Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 1 hour. This firms them up and makes them much easier to slice.
  5. Unwrap and cut each roll into about ½ inch slices. Arrange the pinwheels cut side up on a serving platter and garnish with a little extra chopped green onion.

Notes

  • Make it ahead: wrap the rolled tortillas tightly and refrigerate up to 24 hours before slicing, then cut and serve right before guests arrive.
  • Do not skip the chill: at least 1 hour firms up the filling enough to slice clean rounds instead of squishing the roll.
  • Save a little green onion for garnish: it adds a fresh pop of color on top of each slice.
  • Storage: keep leftover sliced pinwheels in an airtight container in the fridge for up to 3 days.
