Crispy Potato with Salmon is an easy breakfast or appetizer with crunchy potatoes, creamy yogurt sauce, cucumber, and savory salmon. Perfect for parties or busy weeknights!

Ingredients
  

For Potatoes
  • 2 pounds baby potatoes
  • 4-5 ounces salted or smoked salmon about 12 slices
  • 1 small cucumber thinly sliced
  • 2-3 tablespoons fresh parsley chopped
  • salt pepper to taste
  • avocado oil or olive oil spray
For The Sauce:
  • 1 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt pepper to taste (or to preference)
  • 1 teaspoon whole grain mustard

Method
 

  1. Boil the potatoes until fully cooked. Let them cool.
    2 pounds baby potatoes
  2. Place a round shape (3 inches in diameter) on a parchment paper that you’ll later transfer to air fryer.
  3. Place 3-4 potatoes into the round shape. Mash the potatoes with bottom of a glass or mug. Gently press down on each potato to flatten it into a round patty shap.
  4. Repeat with 3 more. Transfer to air fryer. Season with salt pepper, spray lightly with oil.
  5. Cook in the air fryer at 375°F for 12–14 minutes or until golden and crispy. Repeat if needed.
  6. For the sauce: in a small bowl, mix all sauce ingredients until smooth.

  7. To serve, place a bit of sauce on the potato patty, top with 2-3 cucumber slices, then add a slice of salmon and garnish with parsley.
