Boil the potatoes until fully cooked. Let them cool.
2 pounds baby potatoes
Place a round shape (3 inches in diameter) on a parchment paper that you’ll later transfer to air fryer.
Place 3-4 potatoes into the round shape. Mash the potatoes with bottom of a glass or mug. Gently press down on each potato to flatten it into a round patty shap.
Repeat with 3 more. Transfer to air fryer. Season with salt pepper, spray lightly with oil.
Cook in the air fryer at 375°F for 12–14 minutes or until golden and crispy. Repeat if needed.
For the sauce: in a small bowl, mix all sauce ingredients until smooth.
salt, 1 cup Greek yogurt, 1 tablespoon lemon juice, 1 teaspoon whole grain mustard, 1 tablespoon olive oil
To serve, place a bit of sauce on the potato patty, top with 2-3 cucumber slices, then add a slice of salmon and garnish with parsley.
