Ingredients
  

  • 2 cups wholegrain rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cup plant-based milk or regular
  • 2 tablespoon agave syrup or maple syrup
  • 1 tablespoon ground flaxseed
  • 1 tablespoon olive oil
  • 1 ½ teaspoon pure vanilla extract
  • 2 medium bananas mashed (about ¾ cups when mashed)
  • 1 cup nuts of choice chopped
  • fresh fruit raisins, almond flakes or berries, yogurt for serving

Method
 

  1. Preheat oven: Set oven to 375°F (190°C).
  2. Mix dry ingredients: In an 8x8-inch baking dish, stir together oats, cinnamon, baking powder, and salt.

  3. Mix wet ingredients: In a separate bowl, mash bananas and mix in milk, agave, flaxseed, olive oil, and vanilla. Let sit for 5 minutes to thicken. Add half of the chopped nuts (optional).

  4. Combine: Pour the wet mixture into the dry and mix until combined. Stir in chopped nuts.
  5. Bake: Clean the dish edges for a tidy look. Bake for 30 minutes or until golden on top and set in the center. Garnish with rest of the nuts.
