Ingredients
  

  • 1 ripe avocado
  • 1 hard-boiled egg grated
  • 2 tablespoons hummus
  • 1 slice whole grain bread or sourdough bread
  • 1 teaspoon Hawaiian black salt or sea salt flakes

Method
 

  1. Toast the slice of bread until golden brown.

  2. Spread the hummus evenly on the toast.

  3. Place the mashed avocado on top of the hummus.

  4. Sprinkle the grated hard-boiled egg over the avocado.

Notes

  • How to grate the hard-boiled egg? I used a simple handheld grater (microplane), but you can also use a citrus grater. I haven’t tried a box grater for this, as I think it might be more challenging.
  • Preparing eggs for grating - To grate eggs, start by hard-boiling them. Place the eggs in a pot and cover them with water. Bring to a boil, then reduce the heat and simmer for about 11 minutes. Once done, transfer the eggs to an ice bath to cool. This makes peeling easier.
