INGREDIENTS
For Lettuce Wraps
olive oil for cooking
1poundground turkey, or ground chicken
1cupsweet potato , grated or carrots
1cupred onion
a bunch of lettuce leaves
½teaspoonfreshly minced garlic
½cupwater
salt and black pepper to taste
Tahini Sauce
⅓cuptahini
¼cuplemon juice
2tablespoonolive oil
5tablespoonshot water
1teaspoongarlic powder
½teaspoonsalt
⅛teaspoonblack pepper
INSTRUCTIONS
Sauté the onion: Heat oil in a skillet over medium-high heat. Add the red onion and sauté for about 2 minutes until softened and fragrant.
Cook the turkey: Add the ground turkey, season with salt and black pepper, and cook, breaking it into small pieces. Lower the heat, pour in the water, cover the skillet with a lid, and let it simmer for 5–10 minutes to allow the flavors to meld.
Prepare the tahini dressing: While the turkey simmers, whisk together all the dressing ingredients in a bowl until smooth and creamy.
Add the sweet potato: Stir the grated sweet potatoes into the turkey mixture, combining well. Cook for another minute or two until everything is heated through.
Assemble and serve: Wrap the turkey and sweet potato mixture in lettuce leaves and drizzle with the tahini dressing. Enjoy!
