Ingredients
  

For The Turkey
  • 1 pound lean ground turkey can substitute lean ground beef if preferred
  • ½ cup brown onion diced
  • 1 tablespoon olive oil or avocado oil
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon smoked paprika
  • 1 teaspoon minced garlic
For The Veggies
  • 1 tablespoon olive oil or avocado oil
  • 2 medium zucchinis sliced into quarters
  • 1 bell pepper diced
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup water
  • 1 tablespoon tomato paste
  • 4 to 5 cups fresh baby spinach
  • fresh parsley chopped, for serving
  • red chili flakes for serving, optional

Method
 

  1. Cook the onion: Heat oil in a large skillet over medium heat. Add onion and sauté 3 minutes.

  2. Brown the turkey: Add turkey, break it up, and cook 5–7 minutes. Stir in garlic and seasonings.

  3. Remove from skillet: Set turkey aside once browned.
  4. Sauté the veggies: Add oil, zucchini, and bell pepper. Season and cook for 5–7 minutes.
    1 tablespoon olive oil, 2 medium zucchinis, 1 bell pepper, ½ teaspoon dried basil, ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon dried oregano, ½ teaspoon paprika, ¼ teaspoon black pepper
  5. Add everything back: Return turkey, add tomato paste, water, and spinach. Stir and cover.
    ½ cup water, 1 tablespoon tomato paste, 4 to 5 cups fresh baby spinach
  6. Simmer: Let it all heat through for 5–10 minutes until spinach wilts.
  7. Finish: Top with chopped parsley and red pepper flakes, if you want a little heat.
