- Rinse the lentils and cook them according to package instructions.1 cup dry green lentils
- Heat a large skillet with 1 tablespoon olive oil: add the onion and cook for 2 minutes, then add the garlic and cook for another 30 seconds.½ cup onion, 1 tablespoon olive oil, 2 teaspoons garlic
- Add the carrot and cook for 3–4 minutes.½ cup carrot
- Add the mushrooms and cook for 5–6 minutes, stirring occasionally.½ pounds cremini mushrooms
- Add all the spices, mix well, and cook for 1 more minute.½ teaspoon salt, ½ teaspoon cumin, ¼ teaspoon smoked paprika, ½ teaspoon chili powder, ⅛ teaspoon ground black pepper
- Add the cooked lentils, mix everything together, and heat for 1–2 minutes.
