Low Carb Green Goddess Dip and Salad Dressing With Greek Yogurt (No Anchovies)

Our Green Goddess Dip is a combination of creamy textures, vibrant flavors, and wholesome fresh vegetables. This low carb salad dressing pairs beautifully with crisp veggies, crunchy tortilla chips, as a spread for sandwiches, burgers or as a healthy salad dressing.

Ingredients
  

  • 2 tablespoons fresh lemon juice
  • ¾ cup unsweetened greek yogurt full fat
  • 2 tablespoons olive oil
  • 1 clove garlic peeled
  • 2 teaspoons jarred capers
  • 2 tablespoons fresh chives chopped
  • ½ cup fresh parsley chopped
  • ¼ cup fresh baby spinach
  • 3 tablespoons fresh cilantro chopped
  • 3 tablespoons fresh basil chopped
  • 2 tablespoons fresh mint chopped, I used about 12 leaves
  • Kosher salt or sea salt
  • Freshly cracked ground black pepper to taste

Method
 

  1. In a high-speed blender, combine lemon juice, yogurt, olive oil. You can also use an immersion blender here. If using sweetener (honey, maple or agave) add it now. See notes.
  2. Add garlic, chives, parsley, spinach, cilantro, basil, mint, capers, salt, and pepper to the blender.
  3. Blend everything on high speed until smooth and creamy. Transfer the dressing to a bowl and refrigerate for 10-15 minutes for flavors to meld better.
  4. Serve in green goddess salad or as a dip with tortilla chips, veggies or favorite crackers.

Notes

Makes about 1 + ¼ cups of dressing.
I didn't add any sweetener here but feel free to add 1-2 teaspoons of honey, maple syrup or agave if you like a more sweeter taste for the dip. Otherwise, it tastes great without it too.
