INGREDIENTS
Salad:
2cupsbaby spinach
1cupsfresh blueberries
½cuptoasted pecans
1ripe large mango, cubed
½cupfeta or goat cheese, crumbled
2cupsiceberg lettuce, or similar, roughly chopped
salt + pepper, to taste
Balsamic Vinaigrette:
3tablespoonolive oil
2tablespoonbalsamic vinegar
1tablespoonlemon juice, freshly squeezed
½teaspoongarlic powder
1teaspoonhoney
salt + pepper, to taste
INSTRUCTIONS
Make the dressing: In a small bowl or jar, combine olive oil, balsamic vinegar, lemon juice, garlic powder, honey, salt, and pepper. Whisk or shake well.
