Ingredients
  

  • 8 Medjool dates
  • 8 teaspoons natural peanut butter
Optional Toppings
  • Ground cinnamon
  • Unsweetened cocoa powder
  • Crushed peanuts or almonds
  • Unsweetened shredded coconut
  • Sesame seeds
  • Pomegranate seeds
  • Melted dark chocolate
  • Flaky sea salt

Method
 

  1. Using a small knife, carefully cut a slit down one side of each date and remove the pit. Try not to slice all the way through so the date forms a pocket.
  2. Fill each date with **1 teaspoon of peanut butter**.
  3. Sprinkle with your favorite toppings, if using.
  4. Serve immediately or refrigerate until ready to enjoy.

Notes

  • Use soft Medjool dates. Fresh, plump dates are much easier to stuff and have the best caramel-like flavor.
  • Natural peanut butter works best. I like using peanut butter made with just peanuts, but any creamy peanut butter will work.
  • PRO TIP: Warm the peanut butter slightly if it's too firm to spoon into the dates.
  • Store: Place the stuffed dates in an airtight container and refrigerate for up to 1 week.
  • Freeze: Freeze in a single layer until firm, then transfer to a freezer-safe container or bag. They'll keep well for up to 3 months.
  • To Serve From Frozen: Enjoy them straight from the freezer for a firmer, chewy texture, or let them sit at room temperature for 5–10 minutes before eating.
